The night opens an optional cocktail hour beginning at 5pm, before guests are seated for a paced, multi-course dinner that progresses alongside the wines. Courses feature refined compositions including smoked Verlasso salmon, duck presented in two expressions, Wagyu sirloin, and Colorado rack of lamb, each paired with selections from Ashes & Diamonds, including Sauv Blanc, Rosé, Cabernet Franc, and Rouge No. 6.
